Ingredients for 1 person:
1 slice of sourdough bread, toasted
some (vegan) butter or coconut oil
1/2 avocado, stone removed
some lemon juice & salt
approx. 2 tbsp SUUR kimchi-style herb
1 tsp black sesame
optional:
1 egg, boiled until soft and halved
Using a fork, mash the avocado flesh with a few squeezes of lemon juice and a pinch of salt.
Spread bread first with butter or a little oil and then with avocado mousse. Cover with cabbage and optionally the egg. Sprinkle with black sesame.
